Whipped Collagen Coffee

Ingredients
  

  • - 1 Scoop NZProtein Unflavoured Collagen powder
  • - Handful of Ice
  • - 1c Milk of choice
  • - 1T Instant coffee

Method
 

  1. - Dissolve coffee in a dash of hot water
  2. - Combine milk, coffee and collagen into a mug and whisk for 5mins until foamy
  3. - Prepare a glass full of ice and milk of choice (i used coconut).
  4. - Spoon coffee mixture over ice and milk and enjoy!

Collagen Granola

Collagen, Creamer

Ingredients
  

  • Muesli
  • 1/2 c Rolled oats
  • 4 scoops 2 serves NZProtein Hydrolysed Collagen (or our Creamer would work too)
  • 1 c Mixed nuts and seeds I used walnut, almond, brazil nut and sunflower, sesame and pumpkin seeds
  • 12 c Coconut shreds
  • 1/4 t Salt
  • 1/2 t Cinnamon
  • Syrup
  • 1/2 c Coconut oil
  • 1/4 c Honey
  • 2 T Peanut butter
  • Optional: Cacao nubs and chopped dates

Method
 

  1. Preheat the oven to 220oC and line a baking tray.
  2. Add all dry ingredients together on the baking tray, spreading it as thin as possible.
  3. Toast in the oven for 3-5 minutes or until muesli just starts to turn golden - be careful not to burn!
  4. In a microwave safe bowl, melt together the coconut oil, honey and peanut butter.
  5. Pour the syrup mixture over the toasted nuts, oats and seeds and toss until the muesli is saturated.
  6. Again, spread the muesli as thin as possible on the baking tray and return to the oven at 180oC for 15 minutes, mixing every 5 minutes to ensure an even roast.
  7. Once the mixture is all toasted remove from the oven and stir in cacao nibs and chopped dates if you would like extra sweetness.
  8. Allow to cool on the bench completely, stirring occasionally. Enjoy for up to a week in an airtight container.

Collagen Cookies

Ingredients
  

  • - 1/4 tsp salt
  • - 1 tsp vanilla extract
  • - 2 tsp baking powder
  • - 1 medium pureed apple/pear depending on preference both work equally well
  • - 1 large pureed banana
  • - 1/4 cup coconut oil
  • - 1/3 cup NZProtein Collagen powder
  • - 2 ½ cups coconut/almond flour for this recipe we used half and half tip: if you decide to just use almond flour I would recommend only using 2 cups so as to avoid the mixture being too dry.
  • - 1/2 cup cocao nibs/ dark chocolate chips depending on preference

Method
 

  1. Pre-heat oven to 175 degrees fan bake
  2. Line baking tray with baking paper or silicone baking mat
  3. In a bowl using an electric mixer, combine oil, apple/pear, banana and vanilla extract until blended, set aside
  4. In a seperate bowl mix flour, collagen, salt and baking powder together, and slowly stir in the liquid mixture until completely combined
  5. Fold in chocolate chips/ nibs
  6. Refrigerate dough to allow it to harden so it can be rolled into balls.
  7. Shape dough into 1 inch balls and place on tray aprox. 2 inches apart to allow for spreading
  8. Bake cookies for 6 mins, flatten with a spatula then bake for a further 6 mins alternatively they can just be baked as balls
  9. Allow to cool before eating, personally we enjoy them cold out of the fridge so that the chocolate is nice and crunchy.
